By Jess A: Banana lovers, the new Harris Teeter in McHenry row has a deal for you. On certain days, they sell large bunches of ripe bananas from anywhere between 50 cents to $1….that’s right…anywhere from 8-12 ripe bananas for 50 cents to $1. So of course, we decided to buy them. One main reason, is chocolate chip banana muffins. I love the combination chocolate and banana and what better way to enjoy them, than in a delicious baked good.What you need:
- 4 ripe bananas

- 1 egg
- 1/4 cup canola oil
- 1/4 cup brown sugar
- 2 cups all-purpose flower
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 teaspoon cinnamon
- pinch of nutmeg
- heaping 1/2 cup of chocolate chips
What to do:
- Pre-heat oven to 375 degrees
- In the large bowl of a stand mixer mash bananas with fork or potato masher
- After the bananas are mashed, use the paddle attachment to beat in the egg, brown sugar, and oil
- In a separate bowl, sift the dry ingredients together
- Slowly add the dry ingredients to the wet mixture, and mix until well incorporated
- Fold in the chocolate chips with a spoon
- Fill lined or greased muffin tin 1/2-2/3 (depending on what size muffins you want) full
- Bake for about 20 minutes or until a inserted toothpick comes out clean
- Enjoy! These treats are great for breakfast, or a snack at anytime of the day.
